  • 4 tsp of Vegetable Oil
  • 1 Onion, diced
  • 1/3 Cup of Red Bell Pepper, diced
  • 4 3/4 Cups of Assorted Vegetables, diced (Carrot, Brown Mushroom, Butternut Squash, Zucchini, etc)
  • 1/2 lb of Dry Green Lentils
  • 1/2 Cup of Tomato Sauce
  • 5 fl oz of BBQ Sauce
  • 1 1/2 Tbsp of Brown Sugar
  • 1 Tbsp of Vegan Worcestershire Sauce
  • 1 tsp of Soy Sauce
  • 1/4 tsp of Salt
  • Pinch of Cayenne Pepper
  • 3/4 cup of Water
  • 6 Kaiser Style Burger Bun

Directions

Soak the lentils overnight in twice their volume of water.

Sauté the onion in the oil over medium heat for about 5 minutes or until translucent.

Add the peppers and sauce and cook for about 2 minutes or until soft.

Add the mushrooms and cook for about 5 minutes or until the moisture has evaporated, stirring often.

Add the remaining vegetables, ketchup, tomato sauce, BBQ sauce, brown sugar, Worcestershire sauce, soy sauce, salt and cayenne pepper. Stir until smooth.

Drain the lentils then add them to the pot with the measured water.

Bring to a simmer over medium heat, then reduce heat to keep at a slow simmer.

Cook for 1 hour or until the water is absorbed and the sauce has thickened. Add more water if it's needed to ensure that the lentils have enough time to fully soften.

Serve hot on a toasted bun and enjoy!
