Recipe: Pan-Grilled Zucchini with a Fresh Garlic Tomato Topping

- 2 Tbsp of Olive Oil
- 2 Medium-sized, Green Zucchinis
- 2 tsp of Salt
- 1/4 tsp of Salt
- 1/4 tsp of Freshly Ground Pepper
- 2 Cloves of Garlic, Minced
- 1/2 Cup of Cherry Tomatoes
- 2 Tbsp of Shallots, minced
- 2 Tbsp of Butter
- 2 Tbsp of Freshly Grated Parmesan
Directions
Wash and dry the zucchini. Trim the ends to remove the flower end but leave as much of the stem end as possible. Slice in half lengthwise, then score a crosshatch pattern into the flat side of each half, making sure not to cut completely through to the skin.
Sprinkle liberally with 2 tsps of salt and let it stand for 10 minutes until water drops appear on the surface. Rinse well under running water, then pat dry with paper towels.
Heat a skillet (large enough to hold the zucchini halves comfortably without leaving a lot of space) to medium high heat. Add the olive oil and swirl the pan to coat the bottom evenly. Sprinkle the zucchini with 1/4 tsp of salt and freshly ground pepper. Lay the pieces of zucchini flat side down into the pan, ensuring that the entire flat side is touching the pan. Allow the zucchini to cook undisturbed until flat side is evenly browned across its entire surface. Turn the zucchini cut side up.
Reduce heat to medium, add the butter, garlic, shallot and tomato to the pan and sauté until the shallot is translucent (about 2 minutes). Remove from heat.
Arrange the zucchini, cut side up, on a serving dish. Spoon the tomato mixture over the top as a delicious glaze on the zucchini.
Top the dish off by grating fresh parmesan on top and serve immediately, while still warm! Enjoy!
