When you want to eat well but don’t have a lot of time, this dish comes together quickly with crowd pleasing effect. Why would you buy dinner in a box when there are recipes as easy as this one!

Recipe: One Pot White Bean Asparagus Pasta



Servings per recipe: 4
Prep time: 20 minutes
Cook time: 25 minutes


  • 2 C dried pasta, smaller shapes work well
  • 2 C vegetable stock
  • 1 tsp salt
  • 1/4 tsp red pepper flakes
  • 3 C leeks, chopped (1 large leek)
  • 1 bunch of asparagus, peeled and ends trimmed and cut into bite-sized pieces
  • 1 lemon, juice
  • 1 C Swiss cheese, shredded
  • 19 oz. white beans, drained and rinsed

Directions

In a medium pot, add the dried pasta, stock, salt, red pepper flakes, and leeks. Cover and bring to a boil. Reduce heat and cook (covered), stirring every 2 or so minutes, for 10 minutes or until pasta is cooked through. Remove from heat, add lemon juice, cheese, cut and peeled asparagus, and white beans. Stir until the cheese is melted through and serve.
